A cage protecting animal’s vital organs, the rib is one of the most tender cuts of meat. Pork ribs are undoubtedly the tastiest rib and when cooked well the sweet meat falls off the bone.

Served from a stall on Brick Lane, The Rib Man’s ribs come in a variety of ways: full racks, half racks, rib meat rolls and rib meat wraps. Order a full rack and prepare to get messy. The impossibly tender meat, which has been cooked three different ways, falls away from the bone. The accompanying homemade Holy F*** sauces are pretty special too, the main ingredient is chilli, so pour a modest dollop on top for an extra kick.
